Just A Wee Bit Of Rain

It’s a bit squelchy this morning. We had 23mm of rain overnight, and it’s still falling. Before this last weekend we had had a total of 60mm for the month. Now we are sitting on 100mm with 40mm falling in three days.

So it’s a bit soggy, and our water tank is overflowing again šŸ˜†

There was a slip on the road just below our place,Ā fortunatelyĀ nothing serious enough to block it, and the river is up…

I felt very sorry for the chickens actually, as they trooped across the fields in a bedraggled line, eager for their breakfast.

I am hoping it eases off though…


A Little Success Goes A Long Way

On Friday the mail brought us a little bit of bad news.

There was a rejection letter from Random House for the story the E.I.C. had tried to sell them šŸ˜¦

Today, being a sucker for punishment, she sent it off to Harper Collins who are looking at unsolicited manuscripts.

Even better though was the letter in today’s mail. šŸ™‚

There was a niceĀ envelopeĀ from Learning Media saying they will buy another of her stories for the Junior Journal! That perked us up no end!

The E.I.C. alsoĀ receivedĀ an envelope full of mail from a class of fans (year three). She is now handwriting responses to each šŸ˜†

Such dedication!


A Little Bit Of Nom: Citrus Layer Cake

WeĀ receivedĀ one of ourĀ favouriteĀ magazines: Cuisine.

The E.I.C. spotted a cake recipe to try… Nom, nom, nom.

We sprinkled icing sugar rather than iced, and the lemon curd came from the grandma.

The Citrus Layer Cake

Here the humble sponge cake is transformedĀ intoĀ a moist citrusy layer cake.

Lemon Curd

100g butter

200g caster sugar

grated zest and juice of 3 lemons (1/2 juice)

3 eggs and 2 egg yolks beaten.

In a heavy-based saucepan heat the butter, sugar , and lemon zest and juice over a low heat until the butter and sugar have dissolved. Strain the eggs through a sieve then add to the saucepan. stirring with a wooden spoon constantly until the mix thickens (about 5 minutes). Be careful not to let the curd boil or it will curdle. Pour into clean,Ā sterilizedĀ jars and, once cool, store in the refrigerator for 1-2 weeks. Makes 2 cups.

Lemon trickle icing

25g butter melted

grated zest of 1 lemon and 1 tablespoon of juice

2 tablespoons boiling water

2 cups icing sugar

Combine all ingredients,Ā whiskingĀ until smooth.

For the cake

3 eggs

3/4 cup caster sugar

1 cup flower

1 teaspoon baking powder

2 tablespoons milk

45g butter

grated zest of 1 orange and 1 tablespoon of juice

Preheat oven to 180C. Butter and flour 2 x 20cm round sandwich tins or one large tin. [We used two loaf tins]

Beat the eggs and sugar until thick and creamy. Sift the flour and baking powder, and fold gently through the egg mixture. In a small saucepan, place the milk and butter, and heat until the butter has melted, but don’t let it boil. Add orange zest and juice then fold through the batter. Divide the mixture between the 2 tins, smooth the tops and bake for 15 minutes or until the sponge comes away from the sides when pressed gently.

Allow the cakes to cool for 10 minutes before removing from the tin. when cold cut each cake in half horizontally. Use a palette knife to spread a generous amount of lemon curd between the layers and stack on top of each other. Drizzle the icing over and allow to set.

Clucky Chickens and Daffadongdillies

One of the chickens has gone clucky, so we have created a haven for her and her future chicks.

Master 4 has outgrown his cot/bed, and now has a set of bunks. Since his old one was in no fit state to on-sell it has been converted to use as the nursery. šŸ™‚

Meanwhile theĀ daffodil’s, also known as the daffadongdillies in our house, haveĀ startedĀ to flower… Spring must have really sprung šŸ™‚


The Birthday Cake

Here is the cake for the birthday boy tomorrow. There is no lava coming out of the volcano yet because he wants strawberry ice-cream for the lava. Photos of said cake with lava may in fact depict a total disaster, or an amazing success. We all wait with baited breath to find out! šŸ˜†


A Writing Update

I haven’t been feeling the love for my writing still. I tried working on The InebriatedĀ Nematode but it just wasn’t working for me.Ā I think that Gurt and Fursk are calling and the second in the series might force it’s way into being the next Project. I guess that might not be a bad thing. šŸ™‚

Since I now have a release date for The Spiral Tattoo on, the 13th of September, I have spent the evening updating the new “Official” site for my writing. Yes has had some much needed work done one it. šŸ™‚
